Few vendors capture Seattle’s love for vibrant, from-scratch cooking quite like Falafel Salam. What started as Chef Shimi Kahn’s small booth at the Fremont Sunday Market back in 2009 has evolved into one of the city’s most beloved Middle Eastern food experiences.

From pitas baked fresh each morning to crisp falafel and perfectly spiced shawarma, every bite reflects Shimi’s commitment to authenticity and flavor. His journey from pop-up to food truck favorite is built on a simple promise — real food, made with care, and served with warmth.
