Some passions can’t stay hobbies forever. For Onur Gulbay, that moment came when weekend cookouts in Austin, Texas turned into a full-blown love affair with smoke and brisket. Originally from Istanbul, Onur fell hard for the craft of Texas-style barbecue — the patience, the fire, and the camaraderie that came with it.

After more than 15 years in tech and consulting, he made the leap, trading spreadsheets for smokers and launching Outsider BBQ in 2022. The name says it all: Texas flavor through an outsider’s lens. Expect perfectly smoked meats with subtle global touches — a nod to where he’s been and the community he now feeds in Seattle.
